Quick Microwave Caramel Popcorn
4 quarts popped popcorn 1/4 teaspoon salt
1 cube margarine (1/2 cup) 1/4 teaspoon baking soda
1/2 cup brown sugar 1/4 teaspoon baking powder
1/4 cup corn syrup 1/2 teaspoon vanilla
Put popped popcorn into a large paper sack. Set aside. Combine margarine sugar syrup and salt and cook in microwave for 4 minutes, stirring twice. Add baking soda, baking powder and vanilla, stir and pour over the popcorn. Shake the bag and microwave 1 1/2 minutes. Shake again and microwave for 15 seconds. Pour into serving bowl and let cool.
“ This doesn’t store too well in Thailand because it gets soggy (well what doesn’t?) so it’s best to eat right away, but in the states it cools somewhat like Cracker Jacks... yummy!
